A Quick Word on Tyson

It's been awhile since I did a purely-Tyson post. He's changed and grown so much lately, and I thought I would share.

He is getting really good at naming the colors. He likes any kind of game where he can match them or name them.



He must be growing through some serious growth spurts because all he wants to do is eat.



He goes completely crazy when anyone comes over to visit. He either goes into show-off mode, mostly for the aunties and cousins, or boy-mode where he chases the girls and tries to annoy them (or kiss them). I can't believe that has started already. He certainly is his father's child. :)



He is definitely our little parrot. While I'm not too concerned with most of what we say, he does catch on. His favorite saying that we try to discourage (while attempting to hide our smiles) is "I got stupid". I have no idea how he put the sentence together, and I don't think he knows what stupid means, but he knows that it is taboo because he says it and immediately runs away screaming.



One of his favorite things to do is to steal our "spot". Whenever one of us gets up from the couch or computer or bed, he throws himself onto where we were and proudly exclaims "you're in my spot!". How can we help but tickle and tease him afterward?



Tyson is such a good natured boy. He likes to "huggle" and will reach up and stroke my face so tenderly. I love it.



Daddy is teaching him to count by helping him do pull-ups.



I'm grateful to have a yard that a little boy can play in. There are plenty of rocks to be shoveled into the dump trucks, puddles to be jumped into, flowers to be smelled, tree-houses to be played in, and swings to be swung in.



He is interested in the baking and cooking process and always wants to help.



Mostly, he is my most favorite little boy in the world. He blesses our house with his exuberant spirit and his willingness to learn. He always has a ready smile and observes things in the most simple, sweet way. We sure love our little Tyson.

Tyson's Room

Finally, everything is almost as I want it. I have had a good time finding things to put in my boy's room that are colorful and functional. Tyson likes to name all of the animals he sees and asks us what is on the world map and repeats it.




I put up some cork board, which will hang his artwork, that is, when he actually decides he likes to draw and color.




We all really love this giraffe.  


I also put a chalkboard up to write little goals and secret messages.

"What's this, Mom?"

Off the beaten path

Yesterday, we traveled south and visited some petroglyphs that were close to St. George. The road was dirt, the path was uphill, but mild, and the ending was spectacular. We picked up my aunt and explored. It was the perfect day for it. Cool, breezy, and we were all alone.

book club

Painting

I haven't "officially" decorated Tyson's room really, since before he was a newborn, almost three years ago! It was very cutsy and little-boyish. But, now, with his new bed and new bedding, I thought it was a good time to make it a little more big-boyish. Dusty found a map that we had been saving for awhile and had it laminated to hang up on the wall. We have also found quite a few globes at the local thrift store. I wanted some really great art for his room. Something along the line/theme of maps, travel, and animals. I looked on Etsy for hours for some possible purchases and inspiration. After looking at the amazing art, I wondering if I could take a stab at it myself. I bought some canvases and started painting. I had so much fun! How could I have not done this earlier? It was a blast. I am still working on the last one, and some things to come in the mail. After I have it all put together, I'll be sure to post it.

Here are some of the pieces I did for his room. They are simple, and not even close to professional, but I like them. :)

Super good Salmon

I make this salmon recipe at least once a week, and miraculously, we never get tired of it. Dusty, being the thoughtful person he is, decided we needed to share this recipe on the blog. Some of you might have seen a similar recipe, but this is the version we have found to be the best. It only takes about two minutes to prepare and is delicious.

First, line a baking pan with parchment paper. The skin of the fish should stick to the paper when you serve it, so you don't have to deal with yucky skin on the plate. Place a good-sized fresh salmon fillet on the pan. You can find them at the meat counter in your supermarket.



Second, spread any kind of honey dijon or spicy brown mustard over the fillet. We've tried lots of kinds and they all work well.

Thirdly, sprinkle the fillet with kosher or sea salt.



Fourthly, sprinkle and coat the fillet with plain or italian breadcrumbs. Basically whatever you have on hand. Or make your own with bread and a processor.



Lastly, finish off with your favorite herbs. We like dill weed and parsley. Bake at 425 for around 15 minutes or until the salmon is flaky.



Pull it out of the oven, and slice into 4 pieces.



Serve with lemon slices, to squeeze on top, and with some good vegetables. Hope some of you enjoy this too easy and super yummy salmon!
