Here are a few "before" pictures, taken just for the heck of it and not necessarily meant as "before" at the time.
In addition to painting the walls, I painted the bead-board white, updated the outlets and covers to white, and added a border of tile around the countertop. Overall, I am extremely satisfied. It was a good fix and very inexpensive. Those kind are always the best.
By the end of it all Tyson was practically ripping the paintbrush out of my hand, and I can't blame him. It took me much longer than I expected, but was so worth it.

Oh Jess! It is FABULOUS!! I can't wait to scoop it out in person. Keep these projects up. I have lack of motivation these days. But posts like these make me want to do something creative!!!
